One happy Fiesta attender!

Cinco de Mayo—or the fifth of May—commemorates the Mexican army's 1862 victory over France at the Battle of Puebla during the Franco-Mexican War (1861-1867). A relatively minor holiday in Mexico, in the United States Cinco de Mayo has evolved into a celebration of Mexican culture and heritage, particularly in areas with large Mexican-American populations.

So it was a holiday, so it was something to celebrate, and celebrate we did!  Funny thing though...I remembered to get pictures of the decorations but not the people and the food till after the party was over..go figure!  Ken's brother and kids came up and we enjoyed dinner, pinatas and watching a video of Ken and his bro when they went fishing in Cabo.  Good Times!

Valentine's Day: We started our travels in France!

Thanks for the invite Ms. Tammy. I am excited to share our Valentine Candle lit dinner. It was a lot of work and preparation but my little family does appreciate good food.

First off we started with a fancy Jell-o, totally French right! My Rich claims he does not have enough Jell-o in his diet so I thought it a special treat for him.

Then we moved onto French Onion Soup, I took the recipe straight from the Julia Child cookbook, "Mastering the Art of French Cooking." But here is a link to the exact same recipe. It takes a long time and a lot of LOVE and oh so worth it. As the side veggie I served asparagus, which we determined Rich is allergic too, so sad :(

Then it was on to the main course, Beef Bourguignon. This dish is A-Mazing and such a good hearty cold weather meal. Below are the mushrooms and onions ready to saute' up!

Here is my one and only Valentine, love him! Obviously a kid got a hold of the camera!

The final result...One Happy Very Loved Kid.
The table-scape brought to you by my Three Freckles!

And Last but not Least, My first ever batch of home-made Elcairs...Nailed it! Ignore the icing blob in the middle.
My kids have been learning about Peru at school and the Inca's, I am thinking we will fly there next just to eat!

Eating around the World!

So life has kinda taken its busyness without even having to plan some things to stay busy!  But we can't have that!  So we are going to start eating around the world once a month.  It's kind of a countdown till Jaden gets home...a little something to look forward to and a little bit of a learning adventure (shhh if they know that it might not be so fun!)  So to start the this Month off we are eating in Ireland!  Go figure!!  We will post pictures, recipes, reviews and anything else we may do to celebrate the culture.
Miss Amberlee and her family are in on the fun too!  She actually came up with the idea and we are jumping on board.  She started in February so she will post their first experience away from home!  If anyone else would like to travel, let us know and you can post your experiences on here too.  Grab your passports and lets eat the world!
